Healthy Easter Nest Cookies

Happy Easter Everyone! It’s a different type of Easter this year, isn’t it? While in quarantine, I’m finding the mini eggs are coming in handy while I practice the 80/20 rule. I wanted to make a fun cookie for Easter this year, and I think this fits the bill! It is chewy, healthy and full of nutrients that your body will thank you for. I don’t know about you, but I love mini eggs.

They’re made with only six (yes, 6!) healthy ingredients and are ready in under 15 minutes! They are gluten-free, dairy-free, and refined-sugar-free! Yes Please and taste INCREDIBLE! If you’re not interested in making them into cute little nests with as many eggs on top as you see fit…you can just drop them into whatever shape you desire!

INGREDIENTS:

  • 1 cup rolled oats

  • 1/4 cup of shredded coconut

  • 2 tbsp of cacao or cocoa powder

  • 3 tbsp of coconut oil

  • 3 tbsp of maple syrup or honey would work too!

  • 1/2 cup of almond, sunflower seed or peanut butter

Directions:

  1. Combine all the ingredient together in a large bowl

  2. Scoop out mix and form into little nest shapes

  3. Top with mini eggs or other candy of your choice

  4. Let cookies sit in the fridge for 20 minutes to harden.

  5. Sometimes I add almond extract to make them a little more almondy! I LOVE the flavor you may or may not.

  6. Enjoy!!
