Paleo Coconut Date Brazil Nut Bars
My girlfriend two Christmas’s ago made some date bars for me. This was the second year that she dropped them off and I was obsessed and so badly wanted to recreate them! Now, I LOVE coconut and I absolutely love dates but they haven’t always LOVED me back. With SIBO, it was tricky because they are high fodmap so I slowly added them back over the past year I’m able to eat 1 date or 1 bar per day without have symptoms! Win!
My husband and I love a sweet treat once in a while. These fit the bill. This is a perfect healthy snack bar for an active lifestyle. My husband takes them on his long bike rides which shows just how portable they are. They provide massive fuel too!

Ingredients
Paleo Coconut Date Brazil Nut Bars
- 1 1/3 cup slivered almonds
- 2 cups unsweetened shredded coconut
- 10 ounces pitted dates
- 1/2 cup cashew nuts
- 1/2 cup brazil nuts
- 4 teas. coconut oil
Instructions
- Blend almonds just a bit first, add dates, cashew nuts and blend, add coconut oil and brazil nuts and pulse until mixture is thick and sticks together.
- Transfer to parchment paper and form into a square. I used a smaller cookie sheet. Refrigerate until solid, usually about 20-30 minutes is all that is needed.
- Cut into small square and enjoy!
