Cinnamon Roll Cake
I met my BFF on Facebook years ago, which is where this recipe stems from. We met through a group that was called Girls in Fitness and Bodybuilding. I remember seeing her photo holding a baby, and instantly I had an attraction to her energy. I think we started messaging back and forth and broke off into a smaller group, but at the time, I was also really restricting my calories. It isn’t a time that I look back on fondly or to wish I’d go back to that version of myself because truth be told, I was really messed up around food and my body image I wrote a blog post about it here. Fast-forward a decade later, with healing my relationship around food, allowing more variety into my life with food and not stressing out every time I had to go out to eat with the fear of gaining weight.
I recently made this cake for visitors I had, and I remember eating a slice of it and smiling because I’ve come so far with food and how I view it. 10 years ago, my BFF sent this to me, but the way I enjoy it now is completely different to how I enjoyed it last weekend when my family from the Midwest visited the East Coast.
My BFF is pictured above, we have met at least a dozen times since we’ve met. We’ve even stayed two weeks with each other, I flew out to California to stay with her and her family for a week, and then she flew home with me and did the same! The first photo on the left was when we met in Chicago, and the second was when she flew to Boston, and we met Shooter McGavin, a/k/a Christopher McDonald from Happy Gilmore at the Top of the Hub in Boston. So fun!
This Cinnamon Roll Cake, is so delicious and easy to make. I remember making it the other morning while my family was still sleeping and finding joy in the process! Cinnamon Roll Cake is absolutely delicious! The ingredients are relatively easy and most likely, if you bake at times, you’ve got all the ingredients on hand.
I typically eat a slice or wedge of this for post workout or even on the weekends when I’m wanting a little sweetness or more of a treat in my life. I pair with some protein, like my favorite protein shake or my Easy Homemade Breakfast Sausage, but if you are craving a cinnamon roll but don’t want to go through the hassle of rolling out dough, make this ASAP! It’s tastes wonderful with coffee or tea.

Ingredients needed to make my BFF’s Cinnamon Roll Cake: Most likely, you have the 10 ingredients on hand already.
flour
salt
sugar
baking powder
milk
eggs
vanilla
butter
Topping You’ll Need:
butter
brown sugar
flour
cinnamon
milk
Glaze You’ll Need:
powdered sugar
milk
vanilla
What You Need
3 cups flour
1/4 tsp salt
4 tsp baking powder
1-1 1/2 cups milk
2 eggs
2 tsp vanilla
1/2 cup melted butter
Topping:
1 cup softened butter
1 cup brown sugar
2 tbsp flour
1 tbsp cinnamon
Glaze:
1 cup powered sugar
2-3 tbsp milk
1/2 tsp vanilla
Directions:
Preheat oven to 350
In a large mixing bowl, mix flour, salt, baking powder, milk, eggs, and vanilla. Slowly stir in melted butter.
Slowly pour into a 9x13 pan.
Mix topping ingredients and drop evenly over the batter and swirl with a knife.
Bake at 250 degrees for 20 minutes, or until a toothpick comes out clean.
Mix up Glaze using powdered sugar, milk and vanilla.
Take cake out of oven when done and cool in pan.
Drizzle glaze over cake while it’s still warm.
