This summer I wanted a super easy and nutrient dense salad to accompany my many grilled chicken, sausage and burger nights. I absolutely LOVE balsamic vinegar and I thought that this salad would not only give my taste buds a kick but also giving my body some pretty amazing nutrition.
We have basil which is powerhouse and is an excellent source of vitamin K, manganese, iron, vitamin A, and vitamin C. It's also a good source of calcium, magnesium, and omega-3 fatty acids. Yes please!
Cucumbers will give you an amazing amount of vitamin C, vitamin K, magnesium, and potassium. Cucumbers are low in calories but high in water and several important vitamins and minerals. Eating cucumbers with the peel provides the maximum amount of nutrients. Cukes contain a ton of antioxidants, they promote hydration, may aid in weight loss, may help lower blood sugar, and can help promote regularity. Not to mention they are super easy to add to your diet!
Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.
SUMMER BASIL SALAD + CUCUMBERS & TOMATOES
The ingredients to this recipe are pretty simple exactly the way I like it:
INGREDIENTS:
1 head of fresh organic basil
1 package of baby bell tomatoes (I love red and yellow!)
2 organic cucumbers
1/4 tsp salt
Directions:
Wash and peel basil from stems, put aside.
Peel cucumbers and dive into quarter size pieces.
Wash and cut into halves the baby tomatoes.
Mix all ingredients into a medium sized bowl and drizzle with your favorite balsamic vinegar or dressing!
