Ingredients

Classic Caesar Dressing - To make a classic Caesar dressing you
  • 2 anchovy fillets
  • 1 garlic clove
  • 1 teaspoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1 egg yolk
  • 1/2 cup olive oil
  • 1 tablespoon red wine vinegar
  • Blend all ingredients until smooth. This dressing is rich, tangy, and full of umami goodness.
Crispy Chicken Caesar Cutlets
  • Avocado Oil or Olive Oil
  • 2 Boneless Chicken Breasts (approx. 1 lb.)
  • 2 eggs
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 cup flour (I used Eikhorn)
  • 1/4 cup Italian Breadcrumbs
  • 1/4 cup Grated Parmesan Cheese

Instructions

  1. Make the Dressing: In a blender or food processor, combine the anchovy fillets, garlic, Dijon mustard, lemon juice, and egg yolk. With the motor running, slowly drizzle in the olive oil until the dressing is emulsified. Stir in the red wine vinegar and season with salt and pepper to taste. Set aside.
  2. Prepare the Chicken: Preheat your oven to 400°F (200°C). In a shallow dish, season the flour and Italian bread crumbs with salt and pepper, then add in the Parmesan cheese and mix. Beat the eggs in a second bowl large shallow bowl. Dredge the chicken breasts in the flour mixture, then dip them into eggs wash, and place the chicken on a baking sheet lined with parchment paper.
  3. Bake the Chicken: Bake in the preheated oven for about 25-30 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). Remove from the oven and let rest.
