PEANUT BUTTER COOKIES!
IF YOU WANT A YUMMY COOKIE THAT IS NOT TOO SWEET BUT
JUST ENOUGH HEAVEN IN YOUR MOUTH, YOU WILL LOVE THESE!
I promised you my favorite Peanut Butter Cookie recipe, and here it is!
For real, please make them and e-mail me telling me how much you LOVED them! I first had a similar cookie during quarantine from a cute little farm stand in Kingfield, Maine. I would partake after my longer than normal mountain bike rides on the Carrabassett Trails at Sugarloaf, in the woods, and the taste and decadence of this cookie is worth every bite!
Directions:
Preheat oven to 250 degrees. Line cookie sheet with parchment paper.
In a large bowl, whisk together the sugar and eggs (allow eggs to be at room temp).
Fold in vanilla until well incorporated, then spoon in peanut butter until no streaks are visible.
Let chill for an hour or so⦠this makes the cookie moldable and allow it to hold its shape better.
Use an ice cream scooper, or a 2 ounce scooper (like this one here) and place onto a cookie sheet.
Sprinkle each cookie with a little flaked sea salt. This is the best part, IMO!
Bake in the oven for 20-22 minutes, or until cookies are golden brown around the edges but a little paler in the center.
