Homemade Dark Chocolate Peanut Butter Cups
My love for peanut butter and dark chocolate runs deeeeep! So many times, I turn to cooking and creating in the kitchen, when I want to experience more joy.
I love peanut butter cups, but I don’t like all the additives that many brands have, and trust me, I’ve eaten enough Reece’s Peanut Butter cups in my lifetime, but I knew I wanted something a bit cleaner. When I say this, I mean it, they are super easy to make too!
MINDFUL INGREDIENTS
The most important reason to consider making homemade peanut butter cups is using mindful ingredients. When we have a choice about the inputs into a meal or snack, we tend to make a better decision for ourselves. Choosing a clean type of dark chocolate without additives like soy and lecithins, and a nut butter that’s organic with just nuts and salt on the label makes a snack that is not only a bit healthier, but also you know exactly what’s in it plus is satiating.
What You Need
4 ounces dark chocolate (like Alter Eco Dark Blackout or Theo 85% Dark Chocolate)
1 tablespoon unrefined virgin coconut oil
Filling:
1/2 cup peanut, cashew, almond, or seed butter
1 tablespoon honey
Sea salt crystals and cacao nibs for dusting, if desired
How To Make Dark Chocolate Peanut Butter Cups?
STEP ONE
Melt the dark chocolate (either using a double-broiler or microwaving) Stir the "chocolate" ingredients into the chocolate until smooth.
STEP TWO
Using a spoon, place approximately1 tsp of melted chocolate into the bottom of the wrapper or mold and with a spoon, push down the chocolate so that it comes up the sides of the wrapper or mold. Place in the freezer for about 10 minutes.
STEP THREE
In a bowl, mix the peanut butter and honey together.
STEP FOUR
Remove the moldings from the freezer and add one teaspoon of filling into the cups. Then add more melted chocolate to cover the peanut butter filling. Freeze for 2+ hours.
