- 1 tsp vanilla
- 1 cup cottage cheese
- 1/4 cup almond milk, or use any milk
- 2 eggs
- 1.5 cups flour, I used Einkorn, but any flour will work
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup fresh blueberries, tossed in flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the wet ingredients—coconut oil, coconut sugar, vanilla, cottage cheese, almond milk, and eggs. Mix until well blended.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Toss the fresh blueberries in a little bit of flour to prevent them from sinking to the bottom of the muffins.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
