Angie's Lower Carb Pumpkin Pancakes
• 1 cup oat flour
• 2 scoops protein powder
• 4 egg whites
• 1/2 cup pumpkin
• 1.5 cup almond milk
• 2 tbsp stevia in the raw
• 1 tbsp baking powder
• 1/2 tsp salt
• 2 tbsp cinnamon
• 1/4 tsp nutmeg
• 1/4 tsp all spice
INSTRUCTIONS
Mix ingredients together. Use 1/4 cup measuring cup to scoop batter. I usually get 9-10 pancakes so I package them up in groups of 3 and throw them in the freezer. Nutrition is showing for 9 pancakes total below. Syrup optional but it will change nutrition stats. :)
